Sima is a traditional Finnish drink typically enjoyed during May Day celebrations. It is a refreshing and unique beverage made with water, sugars, beer, lemon, yeast, and raisins, offering a delightful and slightly tangy flavor.

Ingredients

  • 5 Liter(s) Water
  • 1.5 dl Sugar
  • 1.5 dl Brown Sugar
  • 1.5 dl Bitter Beer
  • 1 Lemon
  • 2 tsp Yeast
  • 5/6/2006 Raisins
  • 1 tbsp Sugar

Instructions

Boil Mixture:

  • In a large pot, bring the water to a boil. Add the white sugar, brown sugar, beer, and the yellow part of the lemon’s peel. Boil for a few minutes until the sugars dissolve.

Cool Down:

  • Let the mixture cool down to room temperature.

Prepare Lemon:

  • Carefully peel the white part of the lemon’s peel and cut the lemon fruit into small pieces. Add the lemon pieces to the cooled mixture.

Dissolve Yeast:

  • In a small amount of warm water, dissolve the yeast. Once dissolved, add the yeast mixture to the cooled sima.

Ferment:

  • Pour the mixture into clean bottles, adding a few raisins and a small amount of sugar (about 1 teaspoon) to each bottle. Close the bottles and let them ferment at room temperature for 1-2 days until the raisins rise to the top.

Chill and Serve:

  • Once fermented, place the bottles in the refrigerator to chill. Serve cold and enjoy.
